In 2007 Tom Lix founded Cleveland Whisky Company with the mission to drastically speed up whisky aging process. After couple years of experiments he came out with the formula to aged newly distilled spirit for six months in new, charred American oak barrels, then put it in steel tanks along with chopped up barrels. In case of the whiskey presented here chopped up cherry wood is also added. Such mixture then goes through agitation and pressurization to force age the whiskey over the course of a week. Cleveland Bourbon finished in Black Cherry Wood was launched in March 2013 as part of the Uncommon Barrel Collection and the following year scored gold medal at China Wine & Sprits Awards.
Nose: little spirity, with notes of grass, cinnamon, cloves, cherries, vanilla and touch of leather.
Palate: sour cherries and red currants, orange peel, cornflakes, vanilla, touches of cinnamon and wood.
Finish: not too long, cherries, vanilla, corn and wood.
