Aultmore (“Big Burn” in Gaelic) is one of a lesser-known Scottish distilleries. It was founded in 1896 and just 3 years later fell victim to the Pattison’s crash. Since 1923 it has been owned by John Dewar & Sons (currently part of Bacardi) and most of the 3 million liters of annual output goes into Dewar’s brand. Aultmore was one of the first distilleries to treat its waste so that it could be used as cattle feed. The 2012 Gordon & MacPhail release, part of the popular Connoisseurs Choice range, comprises whisky distilled in 2000 and aged in refill ex-sherry hogsheads.
