St. George’s Distillery was founded by father and son, James and Andrew Nelstrop in 2006 as the first distillery in England in 120 years. The Nelstrop family has been involved in farming since 1335 and James has been very accomplished farmer himself. The barley used for whisky production is sourced locally and the water is supplied from an aquifer that runs directly beneath the distillery. The Nelsrtops produce whisky traditional way, without computer assistance. The distillery releases are called ‘chapters’ with the first four chapters being reserved for Single Malt Spirit ‘Not Yet Whisky!’ Chapter 15 comprises whisky distilled from heavily peated malt in February 2010, aged in ASB (American Standard Barrels) nos. 145-148 and bottled in September 2015.
