Scapa Distillery located near Kirkwall, the capitol of Orkney, was founded in 1885 by Macfarlane & Townsend and is currently owned by Chivas Bros, subsidiary of Pernod Ricard. It produces roughly 1 million liters of spirit per annum, mostly for Ballantine’s and Chivas brands. Scapa is one of only two distilleries (the second is Loch Lomond) still using lomond wash still for whisky production – a still equipped with perforated plates controlling the reflux action of spirit. Skiren, released in the summer of 2015, is a NAS small batch whisky, aged exclusively in first fill ex-bourbon barrels. It gets its name from the Old Norse word for “glittering bright skies”.
Nose: sweet, vanilla, honey, cotton candy, apple pie, lemon peel, touch of aniseed and a whiff of sea spray.
Palate: light and sweet, green apples, breakfast cereals with hints of cinnamon, vanilla, toffee and traces of honey-roasted nuts.
Finish: not too long, apples, brown sugar and delicate nuttiness.
